Albert Allaham is the owner of Reserve Cut along with high-end butcher shop The Prime Cut in Brooklyn, NY. He descends from a long line of master butchers dating back over 200 years to Damascus in Syria, where his family ran one of the country’s most respected butcher shops. Continuing this tradition, The Prime Cut specializes in providing top quality meats to customers throughout the New York area.

When he was just 12 years old, Allaham moved to New York on his own. Following high school, he became a full-time butcher, working countless hours to learn the family’s expert techniques. As Allaham continued to hone his craft, he began to dream of one day owning his own restaurant. At Reserve Cut, he hopes to redefine the kosher dining landscape and encourage non-kosher guests to try its superior cuisine.
