Albert Allaham

Founder

Albert Allaham left his home in Damascus, Syria, at 13 with his hopes and heart set on New York City. Speaking no English, he joined his older brother, who was already settled and went to high school to learn the skills he needed to capture the American dream.

Coming from a lineage of butchers going back over 200 years, the brothers' dedication to their craft was unwavering. They opened their first butcher shop in 2004, with Albert being just 17 at the time, right out of high school.
His age didn’t deter him from learning everything he could about the family trade. With pure grit and determination, success started to come, and they quickly outgrew their first location.

Albert and his brothers expanded their butcher shop and opened their now famous “Prime Cut” location on Ave U in Brooklyn in 2007. On any day of the week, you will find his brothers and father butchering beef, cleaning poultry, and ensuring every customer feels they are cared for like family.

After 5 years at their new location, Albert was underwhelmed by the dining options available to the kosher consumer and wanted to bring his incredible beef to a broader audience. And in 2013, Reserve Cut was born. Entering the restaurant business with no experience, Albert was a quick study. By day, he butchered steaks in a white butcher's coat, while at night he would walk the floor in a suit, greeting his guests and making them feel like home.

Hospitality was as crucial as the steaks being served. His unwillingness to give into the limitations of kosher dietary laws led him to embrace them as a challenge to show the world that Kosher can be on the same level as the finest restaurants around the globe.

After 11 years, Reserve Cut has become known as one of the finest steakhouses in New York City, catering to both kosher and non-kosher consumers. Albert, always striving for excellence, believed that he could elevate the kosher dining experience even further. With this vision in mind, he assembled a team of like-minded individuals who shared his mission, and together, they are opening Reserve Cut on Park, the next step in the evolution of New York Fine Dining.
